Job Overview
We are seeking a skilled and passionate Sushi Chef / Japanese Chef to join. The successful candidate will be responsible for preparing authentic Japanese dishes, specialising in sushi and other traditional cuisine, while maintaining the highest standards of food quality and safety. This role offers an exciting opportunity for a culinary professional with experience in food production, team management, and hospitality to showcase their expertise in a dynamic restaurant environment.

Duties

  • Prepare and assemble a variety of sushi, sashimi, and other Japanese dishes according to established recipes and presentation standards.
  • Oversee the daily operations of the kitchen, ensuring efficient workflow and adherence to food safety regulations.
  • Supervise junior kitchen staff, providing guidance, training, and support to maintain high standards of food preparation and service.
  • Manage food inventory, order supplies as needed, and ensure proper storage of ingredients.
  • Maintain cleanliness and organisation of the kitchen area in compliance with health and safety protocols.
  • Collaborate with front-of-house staff to deliver excellent customer service and ensure guest satisfaction.
  • Develop new menu items in line with current culinary trends and customer preferences.
  • Monitor food quality during preparation and presentation to ensure consistency.

Requirements

  • Proven experience as a Sushi Chef or Japanese Chef within a busy restaurant or hospitality setting.
  • Strong background in food production, cooking, and culinary arts specialising in Japanese cuisine.
  • Demonstrable supervising experience with team management skills.
  • Knowledge of food safety standards and best practices in kitchen hygiene.
  • Excellent organisational skills with the ability to work efficiently under pressure.
  • Previous experience in restaurant service including serving customers is desirable.
  • Leadership qualities with the ability to motivate and develop team members.
